October DIY: How to Make A Pumpkin Spice Latte Cake

Delicious Pumpkin Spice Latte Cake

The leaves are changing, it’s getting chilly, and most Halloween lovers are in a state of pumpkin fever. If you’re sucker for pumpkin, than you’re sure to love this cake. Not only is it pumpkin flavored, but it’s also pumpkin shaped! Get ready for a seriously spiced pumpkin latte cake.

You Will Need:

  • Yellow Cake Mix
  • 2 instant vanilla pudding mixes
  • 1 tsp of pumpkin pie spice
  • 5 eggs, or 1 1/4 cup of egg beaters
  • 3/4 cup of oil
  • 3/4 cup pumpkin purée
  • 1/4 cup coffee
  • 2 tsp of vanilla
  • 1 can of icing
  • orange food coloring
  • A bundt cake tin

-Note: To make a cake shaped as a pumpkin, you will need to double the cake recipe, as it takes two cakes to assemble.

Cake Instructions

1. Preheat oven to 350 Fahrenheit.

2. Combine the dry ingredients (cake mix, pudding mixes and pumpkin pie spice) and mix thoroughly.

3. In a separate bowl, combine the wet ingredients (eggs, oils, pumpkin, coffee and vanilla).

4. Add the wet ingredients to the dry, and mix to combine thoroughly- the mixture should be very dense.

5. Grease bundt cake tin

6. Add the mixture to the tin, making sure its even on all sides.

7. Put cake in oven, Bake for 50 minutes

8. The cake will be done when a toothpick comes out clean.

Icing Directions

1. Warm up can of icing for 30 seconds in microwavable bowl. (This will make it easier to mix)

2. Add up to 2 tsp of pumpkin pie spice

3. Add Orange food coloring, to get desired shade of orange

Assembling Pumpkin

1. Cool cakes for about 15 minutes

2. Using a knife, shave away cake, to form a round edge. If one cake is bigger than another, use it for the base

3. Put the larger cake right side up, and use as base. (The spiral should be facing the bottom)

4. Apply thin layer of icing to top of base, and sides of cake

5. Put the smaller cake on top of base, facing upside down. (The spiral pointed up, visibly showing creases)

6. Apply a thin layer of icing to top, making sure to cover any cracks or imperfections.

7. Heat Icing for 30 seconds, and pour on top of cake. (Do not touch or move icing when cooling, or design will be ruined.

8. Reheat and ice cake, carefully using a spatula to glaze icing onto cake.
