DIY: S’more Mini-Pies

Mini S’more Pies are extremely good. They are easy to make and very delicious. They serve about 20 mini pies, so depending on how many people you are serving, everyone can have one or two. I have made these mini pies before and they are always a fun item to make and certainly a fun item to eat!

Ingredients:

Graham Cracker Crust:

  • 2 finely crushed packages of graham crackers
  • 1 stick of melted unsalted butter
  • 1/3 cup of granulated sugar

Chocolate Filling:

  • 1 1/4 cup of heavy cream
  • 4 tablespoons of cubed unsalted butter
  • 1/3 cup of granulated sugar
  • 10.5 oz dark chocolate
  • 3 eggs and 2 yolks

Other:

  • 20 big marshmallows
  • foil cupcake liners
  • cupcake pan

Instructions:

  1. Preheat the oven to 350°F
  2. Add the crushed graham crackers, melted butter, and sugar into a bowl and mix
  3. Put the foil cupcake liners in the pan then coat the inside of the foil to form your crust
  4. Bake 5-7 minutes until they turn a golden brown. Set the pan aside.
  5. Lower temperature to 275°F
  6. Add the cream, butter, and sugar into a bowl and microwave it for 90-120 seconds. Stir 1/2 way through
  7. Add the chopped chocolate and stir until it is all melted
  8. Whisk 3 eggs and 2 yolks in separate bowls. Add a small amount of the warm chocolate/cream mixture to the eggs while stirring.
  9. Pour the egg mixture into the chocolate/cream mixture and stir them together.
  10. Pour the chocolate filling into the cupcake foils, leaving a little room at the top.
  11. Bake for 15-17 minutes, until the filling is set.
  12. Top each pie with a marshmallow and turn the broiler on high.
  13. Broil the marshmallows until they are a golden brown. Once they are taken out and cooled, press down on the top of the marshmallow and spread it across the cupcake.
