DIY: Summer Edition

As the summer months approach, many of you may be looking for some savory treats to chomp on over the hot summer. Since berries are best in the summer,

Since berries are best in the summer, pound cake with whipped cream and berries is an excellent choice. This is fairly simple and a fast treat to make for any summer occasion.

Ingredients:

  • 1/2 pound of butter
  • 1/2 cup of vegetable shortening
  • 3 cups of sugar
  • 5 eggs
  • 3 cups of all-purpose flour
  • 1/2 tsp. of salt
  • 1/2 tsp. baking powder
  • 1 c. of milk
  • 1 tsp. of vanilla extract
  • Handful of blueberries
  • Handful of raspberries
  • 1 tbsp. of whipped cream

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Cream the butter and shortening together.
  3. Add eggs, one at a time, alternating with a cup of flour.
  4. Add vanilla
  5. Combine all the in the mixer. I would recommend using a mixer because the batter can become rather thick.
  6. Mix all the ingredients together.
  7. Pour the batter into a greased pan and bake for 1 to 1 1/2 hours until the toothpick comes out clean from the cake.
  8. Slice the cake and put as much whipped cream and berries as you please on each piece. I recommend adding about a tbsp. of whipped cream and half a cup of raspberries and blueberries on each piece.
  9. Enjoy!
